Frito Pie

This is something I grew up on and I loved it. Its one of those that my mom got from her mom and its been passed down. Plus it is a crock pot recipe so its easy. And who doesn't love it when Frito's are an essential part of a meal?
2 lbs ground beef- cooked drained and seasoned
1 large onion chopped
2 can chili beans
2 can mild enchilada sauce
Mix all and simmer for 2+ hours

Put this on top of your Frito's and then layered as desired
Possible toppings: Lettuce, tomatoes, onion, green peppers, cheese, sour cream or cottage cheese. I know the cottage cheese sounds weird but I think it is delicious and I love it! (I often replace cottage cheese as a topping instead of sour cream this and baked potatoes are my fav with cottage cheese)

Tres Leches: Three Milk Cake

The pic is just a random one that looked good off the internet!
I got this one off of Food Network!! So easy and SOOOO Yummy To make!


1 yellow cake mix (with pudding) bake as directed in 13 x 9 inch pan


For topping mixture:

1 can evaported milk

1 can sweetened condensed milk

1 pint heavy whipping cream (I just use cool whip)


if you want for toppings: sweetened coconut over top of cake, macadamia nuts, cherries or pineapple.



To Finish:

Poke holes in the cake with a fork all over. pour topping mixture over cake. Let mixture absorb completely in refrigerator


Cover cake with cool whip and sprinkle with whatever toppings you have or you like!!

Chocolate Almond Cheesecake Bars

Speaking of the tutu party I have had a few request for this recipe. I have posted it on my blog but here it is again just in case you haven't seen it.

Crust:1 c chocolate cookie crumbs
¼ c butter melted

Filling: 1 pkg cream cheese
¼ c sour cream
¼ c sugar
1 egg
¼ tsp almond extract

Coating: 2 ½ c semisweet choc chips
3 Tblsp shortening
2 oz vanilla almond bark (chopped)
1 tsp oil

Preheat 300°. Line 8x8 pan with foil. Grease foil. Mix crust and press into bottom of pan. Mix cream cheese, sour cream and sugar on medium speed until fluffy. Beat in egg and almond. Pour over crust. Bake 30-40 min (edges should be set and center should be soft). Cool 1 hr on cooling rack then 1 hour in fridge.

Cover 2 cookie sheets with waxed paper. Remove cheesecake from pan (just lift foil out). Cut 8x6 to make 48 bites. Microwave chocolate chips and shortening at 50% power for 3 minutes, stir then microwave at 15 sec increments until melted and smooth. Place 1 cheesecake bite of fork and dip into chocolate covering it (works best when bites are cold). Place on waxed paper. Then microwave almond bark and oil on high 1 min, stir and microwave in 15 sec increments until melted and smooth. Drizzle over bites.

Betty Crocker Rocky Road Bars

1 box betty crocker supermoist milk chocolate cake mix
1/2 cup butter melted
1/3 cup water
1/4 cup packed brown sugar
2 eggs
1 cup chopped nuts
3 cups mini marshmallows
1/3 cup chocolate frosting (betty Crocker kind)

1. Heat oven to 350 and grease 9 x 13 pan
2. In large bowl, stir together half of the dry cake mix, melted butter, water, brown sugar, & eggs until smooth. stir in remaining cake mix and the nuts. Pour into greased pan. Bake 20 minutes (25 for dark or nonstickpan), take out after and cover with marshmallows.
3. Bake another 10-15 minutes longer or until marshmallows are puffed and golden.
In a mirowaveable bowl, mircrowave frosting uncovered for 15 seconds. drizzle over bars. cool completley about 1 hour. for easier cutting use plastic knife dipped in hot water.

I MADE THESE THE NIGHT WE HAD THE TUTU MAKING PARTY AT LIZ HURSTS HOUSE. THEY ARE SOOOOOOOOOOO YUMMY AND SUPER EASY TO MAKE

Cheese cake for a crowd

This is the cake I made at my scentsy party. It's way easy and something different to try.

1 white cake mix, prepared as directed 4 c. powdered sugar
2 (8oz.) pkg. cream cheese 1 pt. whipping cream

Bake cake as directed on a large cookie sheet; let cool. whip ceam
and set aside. Beat cream cheese and add powdered sugar. Fold in whipped cream. spread topping on cake. Refrigerate for at least1 hour. Cut and top with favorite fruit filling. Keep well refrigerated.

Polynesian Meatballs


This one is for Nicole Kerwood! She wanted this recipe! It is what we are having for dinner tonight!! I have to give credit to Heidi Broderick for giving me this yummy recipe! Its super easy to make.
Ingredients:
1 tsp. oil
1 large red pepper, chopped
1 onion, chopped
1/4 cup KRAFT Original Barbecue Sauce
1 tsp. ground ginger
1 tsp. garlic powder
2 cans (8 oz. each) pineapple chunks, drained, liquid reserved
12 oz. (3/4 of 1-lb. pkg.) frozen cooked meatballs
2 cups instant white rice, uncooked
ps It is still good if you don't have red pepper to put in it!!
I actually like to chop up my pineapple chunks so they are crushed.
How to make it:
HEAT oil in large skillet on medium-high heat. Add peppers and onions; cook 5 min. or until crisp-tender, stirring frequently.
STIR in barbecue sauce, ginger, garlic powder and reserved pineapple liquid. Add meatballs; mix lightly until evenly coated. Cook 10 min. or until meatballs are heated through, stirring occasionally. Meanwhile, cook rice as directed on package.
STIR pineapple into meatball mixture. Serve over the rice.
